Suggested Drink: Iichiko Shochu from Kyushu.
Add a touch of Japanese spice to juicy chicken pieces with this Yuzu Pepper Chicken Bites recipe. Using a blend of yuzu citrus and Asian chilli pepper seasoning from Kyushu, along with garlic, soy sauce, mirin and cooking sake, this recipe adds depth and flavour to chicken thighs in a few simple steps.
Serve your zesty, spicy chicken with a side of hot, fluffy Japanese rice and broccoli lightly pan-fried in soy and sesame seeds. Yuzu Pepper Chicken Bites are also great as part of a healthy bento lunchbox or grilled on your barbecue.
Begin by cutting your chicken thighs into small chunks, remembering to keep the skin on. If you are putting on the bbq keep the thighs as they are.
Once done, grab a frying pan and cook the chicken thigh skin side down on medium heat until it starts to turn brown, cover with a lid for a few minutes towards the end.
Once the chicken skin has turned golden, turn the chicken bites over and let the other side cook for a few minutes.
Pretty easy wasn’t it, all you need now is to serve it with cooked rice and veg of your choice. You can also add it to your bento lunchbox to eat at school or work. If you want to appreciate the nuances to this kyushu spice Kyushu we recommend you serve the dish with a glass of Iichiko Shochu, an indigenous alcoholic drink from Kyushu island.
• The juices from the chicken and yuzu pepper mixture will have infused with the oil in your pan to create a rich, zesty sauce, so why waste it? Try pouring a little over your rice for a bit of extra flavour.
